THIS WEEKS RECIPE
This weeks recipe is from our Cher, one of our owners. Once again, when entertaining, she served the
cupcakes and everyone loved them. So she offered to share the recipe with us. Thanks Cher!
BANANA NUT CUPCAKES
1/3 cup butter flavored shortening
2/3 cup sugar
1 cup mashed ripe bananas
2 T. 2% milk
1 T. vanilla
1 -1/3 cup flour
2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/4 cup chopped nuts
Preheat oven to 350º. In a large bowl cream shortening and sugar until fluffy. Beat in eggs. Stir in
bananas, milk and vanilla. Combine flour, baking powder, baking soda and salt. Add to creamed mixture.
Mix well. Stir in nuts. Fill 15 paper lined muffin cups 2/3 full.
Bake 18-20 minutes or until toothpick comes out clean. Cool 5 minutes before removing from pan.
They are good without frosting, but I like a little cream cheese frosting on them. Enjoy!
