She said this is a delicious meatball recipe and works well for potlucks!. It’s called “Hearty Meatball Casserole” Ingredients: 1 ½ (one and one half) lbs. Lean ground beef 3/4 (three fourths) cup regular oatmeal (do not use quick cooking oats) 1 cup evaporated milk 1 tablespoon dry minced onion 1 teaspoon salt ½ (one half) teaspoon pepper 1 cup catsup ½ (one half) cup water 2 tablespoons cider vinegar 2 tablespoons sugar Preheat oven to 350°. Combine first 6 ingredients and form 8 large meatballs. Place in a round 2 quart casserole. Combine the remaining ingredients to make the sauce and pour over the meatballs. Bake uncovered for 1 ½ (one and one half) hours. Allow to cool for 5 minutes before serving. Sauce thickens as it cools. Serves 6-8. Hint - Place baking potatoes in at the same time for an effortless dinner. Enjoy!
