Father's Day is on its way. Come in for some inspiration!

This weeks recipe is from me, Micki, your newsletter editor. I saw this recipe on Pinterest and
thought in sounded good for our family. It is hard to come up with new recipes for chicken! So we
gave it a try and it was delicious! Hope you will like it too.

8 pieces of uncooked chicken tenderloins (or chicken breast cut in strips)
1 can refrigerated crescent dinner rolls
1/2 cup of mayonnaise
1/4 cup  + 3 T.  of grated Parmesan cheese
4 slices of deli-style mozzarella cheese
3 T. butter.
1 cup marinara sauce (optional, we found they were good without this sauce)
salt and pepper

Heat oven to 375º and spray a cookie sheet with cooking spray. (I put tin foil down on cookie
sheet and sprayed with cooking spray- no mess that way!)

Season each side of chicken with salt and pepper and melt 2 T. of the butter in a skillet over
medium high heat. Cook the chicken for about 10-15 minutes on each side until nicely browned,
and set aside.

In a small bowl, mix together the mayo and 1/4 cup of parmesan cheese. This will serve as a
wonderful coating for the chicken to give it a extra kick of flavor.

Unroll each triangle of crescent roll and place one piece of chicken at the wide end of each one.
Spread a good layer of the mayo mixture on top of each piece of chicken.
Divide the mozzarella slices in half to create 8 slices and add to the top of each piece of chicken.
Roll the crescent dough around each piece of chicken and place on the prepared cooke sheet. Melt
the remaining tablespoon of butter in the microwave and brush over the tops of each crescent roll.
Then sprinkle each roll up with the remaining grated parmesan cheese.

Bake for 14-15 minutes or until the roll-ups are golden brown. Serve with warmed marinara sauce
if you like. Enjoy!
